How to Make Creamy Chicken Gnocchi

Creamy Chicken Gnocchi
Hi guys! Yesterday’s dinner, I made creamy chicken gnocchi it very heavy, creamy and lots of good stuff in it! 🙂 My guests loved it and hubby of course!

This soup is perfect for Fall cold weather brrrh  🙂 and it’s really easy to make because I used a ready made potato gnocchi from the store. But if you want to be more creative in your kitchen of course you can always make your homemade potato gnocchi and I am sure it will taste much better! 🙂 I honestly don’t like creamy sauce like carbonara, and other creamy sauce BUT it doesn’t mean that I don’t like it I can’t make it right? LOL. Because a lot of people like/love creamy sauce and so I made this one. I tried Olive Garden’s chicken gnocchi and I do like it because it’s not so creamy for me but every time we go there I always order the Pasta e Fagioli. Anyway, let’s get started and here’s what you need.

Ingredients:

  • 2 chicken breast (I roast a whole chicken and used only the breast)
  • 1 pound  potato gnocchi
  • 1 cup onion, diced
  • ½ cup celery diced
  • 1 cup shredded carrots
  • 2 cup fresh cooking spinach
  • 2 garlic cloves, minced
  • 1/2 cup flour
  • 2 cups half-and-half
  • 4 cups chicken broth
  • 1 Tablespoon fresh thyme
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • salt and pepper to taste

Methods:

  • In a large pot, heat butter and olive oil.
  • Sauté onion, celery and garlic until tender. Add the flour and cook it for about a minute.
  • Add the half and half and chicken broth. Stir until it starts to thicken.
  • Add the thyme, carrots, spinach, chicken and gnocchi. Simmer for about 5 minutes or until gnocchi is cooked and soup is thickened.
  • Season it with salt and pepper and serve while it’s hot! 🙂

Chicken Gnocchi

P.S – I made garlic biscuits to pair with this soup and it per-fect! Just cut the biscuits in half and roll them out and brush them with the mixture of melted butter, garlic powder, Italian seasonings and I stuffed some of them with mozzarella stick! Yummy!
