The Best Loaded Baked Potato Salad Recipe

On Saturday, we invited our friends to our apartment and had dinner together. I made this dish and some other stuff. But today, I'm going to show you how to make this simple and easy potato salad! Usually, when making potato salad, you have to use mayonnaise, but this time we are going to leave it out. Trust me it turned out really good! Let's get ready and here's all you need.


  • 5 Large Yukon Gold Potatoes
  • 1/2 cup sour cream
  • 1/2 cup shredded cheddar cheese
  • 10 strips of bacon
  • 1/4 cup freshly chopped chives
  • 1 tsp. black pepper
  • salt to taste


1. In a large bowl, add sour cream, half of the chives, cheese, salt, and pepper. Combine all of the ingredients and mix well, then put in the fridge for a bit.
2. After, peel and cut the potatoes into bite size pieces. Put in a large pot with water and let it boil and cook for about 20 minutes. Keep an eye on them so they don't overcook...or else you will end up making mashed potatoes!
3. When the potatoes are done, drain and let them just cool for a bit. Put potatoes in a large large bowl and combine with the sour cream mixture. Top the remaining chives and sprinkle with bacon.
4. Serve with grilled steak or chicken! Enjoy!
