Have you ever had pomelo salad before? It is really simple and very easy to make, as long as you have all these ingredients. So what are you waiting for? Let's get started! You need the following:
1. Thinly slice the shallot, divided into 2 parts: 1 set aside for salad, and the other one deep fry in oil until turn golden crisp. Drain and set aside.
2. Par- boil the prawns and set aside.
3.Preparing dressing by mixing salt, sugar and lime juice together in a salad bowl.
4. Add pomelo pieces, followed by sliced shallot, chopped spring onion, toss a little, then add ground dried shrimp, roasted peanut, chili powder, golden crisped shallot, roasted coconut flakes and toss to combine well together.
5. Garnish with prawns on top and serve!
